Better For You Boxed Cake Mix

First off, I’m not claiming that this is healthy. Baking from scratch really is the way to go. That being said, sometimes a girl gets lazy. I had a sweet tooth and a box of cake mix just sitting in my pantry. I wanted minimal mess and quick results. Then I thought, why not try using greek yogurt? Since I’ve got a bit of an obsession with greek yogurt it seemed like the rational thing to do. So instead of the typical water, oil, and eggs; I added in greek yogurt and almond milk.

Better For You Boxed Cake Mix Cupcakes

  • 1 box of cake mix (chocolate preferably)
  • 1 cup plain greek yogurt
  • 1 1/2 cups almond milk

Combine the greek yogurt and almond milk then mix.

Add in the boxed cake mix and mix again. You’ll end up with a pudding like consistency.

Fill each cupcake liner about halfway. I was cautious of overfilling, so I ended up with 24 cupcakes. Bake according to the boxed cake mix’s directions. Add additional time until they pass the toothpick test.

My little gamble paid off deliciously! The cupcakes were rich, indulgent, and incredibly moist. They were so yummy they didn’t even need frosting. This cements my belief that greek yogurt really does make everything taste better.

    Fabulous idea! I just read somewhere that you don’t need to add all those eggs and oil to boxed cake mix. This is an easy redux! I might try it tonight!
